Lemon Sole

Lemon sole is an oval flat fish with sweet, delicate white flesh. The sole family, which also includes Dover, was held in high esteem by the ancient Romans, who called it solea Jovi, or Jupiter's sandal.

Lemon sole is a lean, low-calorie fish, making it suitable for those looking to lose weight while keeping their protein intake at a healthy level. Rich in vitamin B12, niacin, phosphorus and selenium.

*Best when simply cooked and served with a buttery sauce
*Sole meuniere : This popular French classic coats the fish in seasoned flour which lightly protects the fish without overpowering its flavour
